Hoxton Square is set to welcome an Italian newcomer as The Circle Pizza Co. opens tomorrow, bringing a much-needed boost of damn fine pizza to this culinary hub.

Focussing on using the best of seasonal and homemade ingredients, the chefs will work their magic to create pizzas that will have diners falling in love at first bite. The star of the show is a remarkable sourdough base made using third-generation starter dough that began life 150 years ago in the home of pizza, Napoli. Made with 100% natural ingredients, the dough is lovingly cured for a minimum of 24 hours, producing a base so light and crispy it’s worth celebrating.

Topping the pizza will be a mouth-watering selection of ingredients. Meat lovers will be treated to a wide choice of Italian-imported meats, such as the 18-month matured San Daniele prosciutto, the fiery Nduja Calabrese and air-dried Bresaola from Lombardy. What’s more, the menu will be offering one particularly unique ingredient – the chef’s own homemade sausage. Head pizza chef Tony (silver medalist at the World Pizza Championship in Rome) has fondly honed this recipe to perfection over the years, resulting in a traditional-style Italian sausage made with fennel and his own top-secret blend of herbs and spices.

Signature pizzas on the new menu will include:

· Diavola – This extra spicy creation consists of scotch bonnet chillies, the chef’s own spicy fennel sausage, friarielli, fresh mozzarella, Scamorza (smoked buffalo mozzarella) and San Marzano tomato – approach with caution!

· Circle Bresaola – A pizza bianca comprising of fresh mozzarella, Bresaola, fresh baby plum tomatoes, baby spinach and Parmigiano Reggiano with a drizzling of extra virgin oil.

· Dark Side Of The ‘Shroom – Made using seasonal mushrooms that are marinated on site daily, fresh mozzarella, homemade ricotta cream, sundried tomatoes and San Marzano tomato.

· Capo’s – A meaty feast of spicy Calabrian ‘Nduja, homemade spicy fennel sausage, salami piccante, fresh mozzarella, San Marzano tomato topped with fresh basil.

The Circle Pizza Co. will open for soft launch on Thursday 16th of April offering 50% off pizza’s until Wednesday 22nd April. Official launch will be on the 23rd April.
