Ben & Jerry’s ‘Wich Cookie Hack!

Here’s a great little summertime hack I tried the other day, perfect for the glorious weather that has finally arrived (only two months late!) Now put your hands up if you love a bit of Ben & Jerry’s ice cream? I imagine there are a lot of you and a couple of years ago I was lucky enough to go to the Ben & Jerry’s music festival. It was a celebration of great music and of course some of the most delicious ice cream in the world. I remember trying every single flavour on offer but the one that sticks out for me most is the Ben & Jerry ‘Wich Cookie, a combination of two soft doughy cookies packed either side of a slab of vanilla and chocolate chip ice cream. These things are so good but not the easiest things to find so I decided that enough was enough, I was going to make my own!

Ingredients
1 pot of your favourite Ben & Jerry’s
Loads of bags of cookies (make a load and freeze them)
1 bread knife (essential)
1 bag of chocolate chips

Right you can bash these out in literally a minute! Grab your cookies and face them top down on the plate.

Grab your tub of B&J and you want to cut it into small discs with the bread knife. This works best if the ice cream has been left out of the freezer for a little while. Also do not try and remove the packaging, this is what keeps it all together and gives you perfect discs of creamy goodness.

Once you have your disc of ice cream, peel the packaging from the outside and proceed to roll it in the plate of choc chips! Try and get it covered.

Then squash it between your two cookies and step back and admire your workmanship. If you want a seriously messy ‘wich cookie you can put the cookies in the microwave for 10 seconds to get them unbelievably gooey!

This is my favourite mix. The plain chocolate chip cookies courtesy of Sainsbury’s Taste The Difference range, placed in the microwave for 10 seconds surrounding a huge wedge of Ben & Jerry’s Phish Food! A magnificent combination of chocolate ice cream and marshmallow and caramel swirls, topped off with dark chocolate fish! I sank two of these bad boys in the sun and boy did they go down well.

So there you have it! Fancy a little treat whilst you’re topping up that tan, look no further than the ‘Wich Cookie. Perfect any time of day, just add sun and some summer tunes!
