This summer Fort George will proudly open for its fourth season with two innovative new chefs who have an impressive collaborative background which includes extensive Michelin Star experience. Luciana Victoria Russo and Ramon Ortigosa Marsilio, from Spain and Argentina respectively, will be taking the helm in the kitchen to bring guests a truly mouth watering culinary experience.
“Ramon and I are both hugely excited to open the doors of The Restaurant at Fort George. We have worked in some amazing settings but none quite as arresting and naturally beautiful as this. We’re surrounded by incredible natural ingredients and look forward to a summer in which we can surprise and delight all of our customers,” said Luciana Victoria Russo.
Looking to vibrant Mediterranean cuisine for inspiration, Russo and Marsilia will fuse traditional and contemporary tastes. Guests will be invited to enjoy a selection of dishes including fresh octopus with almonds and smoked peppers, Argentinean aged rib eye steak or fish caught straight from the Adriatic Sea; complemented by perfectly prepared accompaniments including fresh grilled zucchini and peach. The restaurant also boasts a carefully curated wine list ensuring that guests are invited to marry exquisite cuisine with delicious local Croatian wines as well as top wines from around the world – thoughtfully selected to compliment the flavours chosen and created by Luciana and Ramon.
Established by the British Royal Navy in 1813, Fort George was lovingly restored by parent company European Travel Ventures in 2012. Situated on a promontory above the harbor town of Vis, the Fort provides the perfect setting to sit back and get lost in the beauty of the location. This tranquil island has waited over two hundred years for
a dining experience to compliment its unique ambience and the restaurant looks set to establish itself as an un-missable stop on this beautiful stretch of coastline.

The Restaurant will be open from 12pm until 11pm every day throughout the summer except during private events and a three-course meal for two begins at around £40.
