Tonight’s post is about a great quick and easy recipe for some truly indulgent and mouth watering, Fudging Good Muffins that I whipped up at the weekend! Packed full of melting chocolate chunks and oozing fudge, these gooey little puds are the perfect treat for a sociable summer night!
If, like us, you were adamant that we’d finally got shot of winter and the sun was here for a 6 month soirée, you’d probably planned a feast of mighty proportions for the bank holiday. That’s exactly what we had in mind and after sourcing some incredible beef brisket, marinating our delicious pork chops and sinking a few cold ciders, we were full to the brim. However, everyone knows you can’t end it like that. After mountains of meat soon comes the cravings for something sweet! I am the worst for it and always find that I can still make room for a bit of pudding. With that in mind I had planned a little treat for my dinner guests.
My idea came after losing a couple hours to Pinterest sprucing up We The Food Snobs page over the weekend. One of the pins had led me through to the Dr Oetker recipe site and I was determined to bake a few of the recipes I had found but as always add my own twist to it. I popped to the shops and got some ingredients and set about creating my Fudging Good Muffins!
275g Self Raising Flour
4tbsp Bournville Cocoa Powder
85g Caster Sugar
110g Melted Butter
1tsp Vanilla Extract
85g Fudge Chunks
85g Chocolate Chips
Chocolate Hearts for the guests!
This is such a simple recipe. Just get two mixing bowls and sieve the flour and cocoa together into the first. When this is done, carefully melt your butter in the second bowl over a pan of boiling water. Stir until its completely melted and then add your sugar, milk and eggs. Don’t forget to add your teaspoon of vanilla extract. If you don’t have extract I imagine it will be fine to use vanilla essence.
Then fold the flour and cocoa into the melted butter mixture until it is completely combined. Now the fun part! Rip open the chips and chunks and pour them into that delicious chocolatey mess. Looks good doesn’t it! After picking a couple of chunks of the top stir them all in to the mixture and ready the muffin cases.
I managed to get twelve big beauties out of this mixture but I guess you could make them larger if you want, bigger is definitely better in the baking world if you ask me!
Once that’s done, pop them in the oven at 180°C for 25 minutes. Watch them though, as I usually like to take mine out early so they are still slightly melted.
By the time the timer went, the kitchen had been filled with a delicious chocolatey aroma. The muffins had puffed up into chunky little puds, oozing chocolate and littered with fudge chunks.
They smelt amazing!
I quickly applied some chocolate hearts to top them off, everyone loves a bit of decoration.
Then it was time to have a taste!
Served instantly from the oven, it was incredible! With molten chocolate fusing with smooth rich fudge, all surrounded by a moist dark chocolate sponge, it was no surprise these went so quickly!
These must have taken 30 minutes max to throw together and went down an absolute storm with the dinner guests. It was the perfect ending to the BBQ and would be a welcomed treat for any summer evening get together with your chums this summer!
